Overnight Beans & Ham

3/4 cup dry beans, mixed
3/4 cup soybeans
1 cup carrots, diced
1 cup celery, diced
1 cup onion, chopped
2 cups ham, chopped
2 teaspoons salt
2 tablespoons parsley flakes
1/2 teaspoon thyme
1 teaspoon baking soda

Soak beans overnight in water. Next day, cook four hours in crockpot. Add remaining ingredients, and cook 2-3 more hours until done. Add more water as needed. Serves 8.

Per serving: 216.5 calories, 7.6 grams fat, 30.4% calories from fat, 20 mg cholesterol, 1,251 grams sodium.
