SECOND INTERNATIONAL SYMPOSIUM
ON THE ROLE OF SOY
IN PREVENTING AND TREATING CHRONIC DISEASESeptember 15-18, 1996

FOREWORDIt is with great pleasure that we present to you abstracts from the Second International Symposium on the Role of Soy in Preventing and Treating Chronic Disease and to the satellite symposium on soy and infant health, and isoflavone pharmacokinetics and measurement. From September 15 to 18, we heard almost 80 speakers from 18 different countries present their latest research on the health attributes of soyfoods and soybean components (oral abstracts). In addition, there were nearly 40 poster presentations.
All of the abstracts are included here, which will make for an excellent reference until the symposium proceedings are published sometime in 1997 in the American Journal of Clinical Nutrition. In addition to the abstracts, personal information on all the speakers is included so that you can easily contact colleagues with a common interest in soy.
A symposium of this scope requires considerable effort and planning and many people have played a critical role. In particular, Dr. Koen Descheemaeker, the scientific coordinator, and Dr. Roger Leysen, the secretary general, have work tirelessly in this regard. Of course, the symposium would not be possible if it were not for the many very generous sponsors. Finally, a personal thanks to the speakers, poster presenters and attendees for their contributions toward making the symposium a success. It has been an honor to be involved in the organization of this symposium.
