Banana Date Bread
1-1/2 cups flour (all or part whole wheat)
1/2 cup soy flour
1/2 tsp cinnamon
2 tsp baking powder
3/4 cup sugar
1/4 cup soy oil
2 egg whites
1 cup mashed ripe bananas (about 2 medium)
1/4 cup soy or dairy milk
1/2 cup chopped dates
Preheat the oven to 325°.
Sift together the flour, soy flour, cinnamon and baking powder. Set aside.
In a large mixing bowl beat together the sugar, soy oil and egg whites. Add the mashed bananas and soy milk and blend well. Add the sifted dry ingredients, stirring just until blended. Stir in the dates.
Pour the batter into a nonstick or lightly oiled 9" x 5" loaf pan. Bake at 325° for about 1 hour, until a tester inserted in the center comes out clean and the sides are pulling away from the edge of the pan. Cool in the pan for 10 minutes, then remove to finish cooling.
