Replace up to one-eighth of the flour in your yeast breads and one-fourth of the flour in your quick breads with soy flour (stir well before measuring).
Replace some or all of the liquid in your bread recipes with soy milk.
As the quantity of soy increases in a bread recipe, you may find that your loaves are browning faster. Bake the bread at a slightly lower temperature or cover the loaves loosely with foil during the last few minutes of baking.
